Russetts are probably too starchy to allow for fluffiness.Stubshttps://www.blogger.com/profile/13601236736580461674noreply@blogger.comtag:blogger.com,1999:blog-9037410685213030740.post-81557491037258080362011-04-21T08:58:44.535-07:002011-04-21T08:58:44.535-07:00I'm too cheap to buy anything but a russet. Inside the cake is still pretty mashed-potato like, even though I made them pretty thin. I'm guessing I could make it more cakey with using a greater flour:potato ratio, but I didn't want pancakes with potatoes in them. I wanted potatoes made into a pancake. Senseless distinction? Maybe. I also considered adding egg, but Pat voted that down. What do you think?keep growinghttps://www.blogger.com/profile/13108828624180772190noreply@blogger.comtag:blogger.com,1999:blog-9037410685213030740.post-14245625407825061502011-04-20T19:08:41.344-07:002011-04-20T19:08:41.344-07:00Not to worry, I've already moved on to Plan &q...Not to worry, I've already moved on to Plan "B". I've always made these like my mother did, with leftover mashed potatoes and they've always been quite dense. However, if you used Yukon Golds and riced I bet you could get a fluffy pancake.Stubshttps://www.blogger.com/profile/13601236736580461674noreply@blogger.comtag:blogger.com,1999:blog-9037410685213030740.post-65130198310828008782011-04-18T11:29:37.148-07:002011-04-18T11:29:37.148-07:00You can't upstage the syrup, though, so go rig...You can't upstage the syrup, though, so go right ahead on that one.keep growinghttps://www.blogger.com/profile/13108828624180772190noreply@blogger.comtag:blogger.com,1999:blog-9037410685213030740.post-12784388990415868712011-04-18T11:28:46.148-07:002011-04-18T11:28:46.148-07:00Oh, I'm sorry! These deflate rather quickly. The pictures are taken post-let-down, so it's true to life, but they look so wonderful and fluffy while cooking....

Just don't upstage me. :)keep growinghttps://www.blogger.com/profile/13108828624180772190noreply@blogger.comtag:blogger.com,1999:blog-9037410685213030740.post-83668978149051747882011-04-18T10:46:28.023-07:002011-04-18T10:46:28.023-07:00It’s difficult for me to deal with the range of em...It’s difficult for me to deal with the range of emotions I’m having due to this entry. On the one hand they look delicious, on the other hand I was going to make mashed potato pancakes as my entry. I’m always happy to see someone posting, and clearly I think these would be good…but I despise you :)Stubshttps://www.blogger.com/profile/13601236736580461674noreply@blogger.comtag:blogger.com,1999:blog-9037410685213030740.post-63068446761096739042011-04-16T17:57:20.775-07:002011-04-16T17:57:20.775-07:00Deeee-licious!
