Neapolitan Cannoli – August 2009 – Layers Challenge – Sara

Do you have any idea how difficult it is to find a cannoli tube in this town?! Impossible, so I took this opportunity to make a layered cannoli. Actually I made Neapolitan Cannoli because I had eaten some Neapolitan ice cream and though it sounded like a good idea.

Shells:

1 ½ cup of flour (give or take a bit)

2 tablespoons sugar

1/8 teaspoon salt

1 tablespoon soft or melted butter

1 egg

2 tablespoons (give or take) of white wine

** Cocoa Powder and Grenadine/red food coloring for mixing after splitting dough

I then split the dough into three balls. I left one as is for vanilla. Rolled about 2 tablespoons of cocoa powder into one for chocolate and a tablespoon of grenadine and some red food coloring into the third for cherry. Final dough balls pictured below
I then rolled out the dough very thin and cut out circles. (You’d get quite a few circles, but I just rolled out about an inch ball because of time constraints)




Fry them up in an oil of your choosing.

You’ll end up with this.


Filling:

1 Tub of mascarpone cheese (traditional filling is ricotta, but I prefer mascarpone)

½ cup powdered sugar

1 tsp vanilla

1/3 cup heavy whipping cream

** Added melted chocolate for the chocolate filling and grenadine/food coloring for the cherry filling


Stack chips and filling however you desire. Top with a cherry! Yum, Yum eat it up!
